The results of the evolution of the total antioxidant content (TAC) and total polyphenols (TFC) in four varieties of vitis vinifera (cv. Carignan, Muscat of Alexandria, Syrah and Cabernet Sauvignon) are presented. Three analytical methods: FRAP (Ferric Power Reduction), ABTS (2.2 '-azino-bis (3-ethylbenzothiazoline-6-sulphonic acid) and DPPH (2,2-diphenyl 1-1 -picryhydraziyl) were used for the TAC. The content of TFC was performed by the Folin Cicolteau method. Grape cultivars under study were subjected to three contrasting conditions of solar ultraviolet radiation: 60% attenuation, 20% attenuation and no attenuation. The values of attenuation were extrapolated from measurements of a UV-B YES pyranometer under each the two coverages chosen for ultraviolet-b radiation (UVB). Grape plantations are in the same latitude and longitude, and on average, the same elevation above sea level. Fresh berries were collected between in four weeks after veraison and the last collect at harvest. A block design with three randomly selected replicates of 10 plants for each level of attenuation was performed. Theres is sligh dismiss in the TAC content between the two weeks before harvest, such behavior has been observed in the three of the analytical methods used.
