The influence of ultraviolet B radiation in the evolution of the main physicochemical parameters of the grape and wine varieties Moscatel and Carignan grown in the Central Valley of Tarija has been measured. Measurements of solar ultraviolet B radiation (UV-B), were carried out every day from December 2009 through March 2010, using a UV-B1 YES Pyranometer and Skye SKU240. Two sensors were installed in the vineyards of Centro Nacional Vitivinícola at Tarija Bolivia (1879 masl). There were two trials for each of the two grape varieties, each trial with three treatments and three levels of UV-B: 0% attenuation, with 20% attenuation and with 60% attenuation. For the UV-B atenuación levels anti-hail net and plastic of 250 microns were used. The basic analyzes were performed during the period and ripening of the berries, and measues of weight, soluble solids, probable alcohol, total acidity, pH, total anthocyanins and polyphenols were carried out. An increase in the sugar content and a decrease in the total acidity was observed. The amount of soluble solids, total solids, volatile acidity, total acidity, density, pH, reducing sugars and antioxidant capacity was determined in both red and white wine. The results show that the more radiant energy the plant receives, ripest fruits are obtained, with a higher sugar content and higher concentration of antioxidant compounds, it was shown that red wines have higher concentrations of total antioxidants than white wines.
