ABSTRACT Diabetes mellitus is a multifactorial disease and multisystem involvement, which requires extensive metabolic control with the patient with this disease to avoid the dreaded chronic complications that will lead to disability. This is the diet in diabetes mellitus, constitutes the cornerstone of the management of the patient, who must reconstruct the dietary pattern and life, en to achieve glycemic control to keep it stable without complications, therefore, the diet will be crucial in the glycemic management with or without use of drugs and under professional supervisión. The diet should be calculated and rationally structured to not deplete the nutrient diabetes patient, or overload their energy valúes and thus the regulation of blood glucose, with the secondary intention of maintaining a healthy weight and reduce levéis of circulating glucose and consequently delay the onset of chronic complications.
