ABSTRACT The vegetarían diet is considered a lifestyle adopted under principies and moral philosophy, which induce the individual to consume plant -based foods. This way of life has been established with some differences in relation to food consumption , such that it has led to the emergence of variants that are most often practiced as diet : vegan , raw food, frugivorous or api diet that have become fashionable in some regions of the world, while others are rejected by regional cultural characteristics. While vegetarían diets have shown great benefits in terms of care for human health by reducing the risk of diseases such as obesity, hypertension, atherosclerosis, etc . Also shown limitations in their use, since the absence or reduction consumption of animal protein, can lead especially in early ages nutritional deficiencies that lead to growth retardation or consequential alterations to reduce vitamin and some minerals.
