The enterotoxaemia formed by present Staphylococcus aureus in foods with contamination risk as milk and its derivatives can produce gastrointestinal signs. The enterotoxigenic methods of microbiological diagnosis for S. aureus are quite sensible but little specific and of high cost constituting in disadvantage. The technique, Chain reaction of Polymers (PCR) is an alternative method to identify to the producing gene of enterotoxaemia of S. aureus. In the present work 40 milky product samples were analyzed by microbiological and molecular methods. In the bacteriological culture one was in 5 (25 %) samples of milk and in 4 (20 %) samples of cheese. By means of the PCR enterotoxigenic type A was identified in 1 (5%) shows S. aureus. The contamination with S. aureus, can be influenced by contamination of the material, deficient conservation, inadequate manipulation and the time prolonged between the elaboration and the consumption of these foods.
