This research aims to measure climate change effects and impact on food security in Ladislao Cabrera Province, based on quinoa produce. The period under review goes from 1992 to 2010, for which, different tools have been used, such as, participatory surveys, Geographical and Tele-detection Information Systems, 5TM Landsat Images (UTM cartographic projections), and Datum WGS 84 for the cartographic work, while for field work GPS data was collected. Each image was geometrically and radio-metrically standardized. Also, for the identification of vegetation cover, a Standard Difference Vegetation Index Algorithm was used, allowing observing the effects and future agricultural frontier for 2015- 2025. Finally, research conclusions and findings are presented, putting emphasis on climate change effects and impact on people's food security
