Abstract Sugar production in the Santa Cruz region is an activity that dates back to the colony. Although, it is not known with exactitude the year in which sugarcane was introduced in the region, the accounts allow to estimate that it was introduced during the first 20 years after the foundation of the City of Santa Cruz de la Sierra, in 1561 The sugar trade with the cities of the Real Audiencia de Charcas was the factor that articulated Santa Cruz with the Peruvian economic space based on the production of Plata in Potosí. During the first half of the 19th century, the characteristics of this space did not change significantly. The productive process maintained its preindustrial characteristics during the first 55 years of republican life, despite the fact that there was an intention to modernize the process from the second half of the century. The production of Santa Cruz sugar grew from the colonial period, to multiply almost 12 times, the amount that was produced in 1793. The sugar trade had national scope, as this article was sent to most Bolivian cities, despite the difficulties involved in moving large amounts of sugar to different commercial places
