Abastract The sugar industry is affected by a glucose polymer known as "dextran", synthesized by the action of an enzyme produced by the bacterium Leuconostoc mesenteroides, causing serious damage to the overall process. In order to properly follow the development of dextran on the factory products, a technique based on the indirect determination of the polysaccharide concentration by spectrophotometry is applied, taking as reference products: first pressure juice, clarified juice, molasses, Molasses, and sugar. In turn, these analyzes were carried out in three different seasons of harvest: in May, August and November. During the month of May, the development of dextran was initially low: from 466.9 mg / Bx in first-pressure juice to 1061.6 mg / Bx in clarified juice increasing to 7910.7 mg / Bx in molasses. The month of August starts with 714.4 mg / Bx in the first pressure juice, reaching 4919.8 mg / Bx in the final honey. Finally, in November, the development of dextran is much more violent than in previous months, with 2350 mg / Bx in the first pressure juice, reaching 23745.2 mg / Bx in its molasses and 1801 mg / Bx in the Sugar, effects caused by the poor condition of the cane used in the process.
