    Resumo

    The present work was carried out with the purpose of analyzing and developing an adequate method to obtain a good germinated grain of cañahua in a controlled environment in the Choquenaira Experimental Station belonging to the Faculty of Agronomy -UMSA. The grains used forthe germination are varieties of cañahua Ecotype orange and Purapurani, which are obtained by mass selection whose yieldson averageare 1,560 and 1300kg ha-1 respectively. Tosubject the grains to the gemínate, all the impurities were first removed, weighing 0.5 g of grain for hydration and placed in the trays inside the germination chamber for treatment at three temperatures of 10, 20 and 30 ° C with irrigation continúes. Data were taken on the development of the physical characteristics of the sprouts and then the analysis of the nutritional valué. The results of germination for length of the radíele and cotyledon in Ecotype orange were 36.16 mm and 30.20 mm in Purapurani controlled at germination temperature of 30 ° C. Meanwhile, the germinated weight was 3.22 mg for Ecotype orange and 3.00 mg in Purapurani in the same temperature condition. In the chemical analysis of the grain in average protein content in the grain of cañahua of the Ecotype orange was 15.44% and Purapurani is 19.24%. Meanwhile, the protein content in the sprouts presents 6.28% in Ecotype orange and 6.25% in Purapurani. The minerals analyzed in the cañahua grain were significant ¡ron 13.21 mg / 100g and the phosphorus content was 300.19 mg / 100g for Orange ecotype and for Purapurani variety the ¡ron was 13.72 mg / 100g and in phosphorus it was 452.37 mg / 100g. Meanwhile, these valúes for sprouts increase in a proportion of 27%, for ¡ron to 16.80 mg / 100g and the phosphorus content to 374.31 mg / 100g for Orange ecotype and for Purapurani variety ¡ron at 13.80 mg / 100g and in Phosphorus decreases to 340.61 mg / 100g. The temperature is associated with the conditions of the germination process in the cañahua beans, influencing the rate of water absorption, the speed of the enzymatic reactions and the transport of the reserve substances. The conditions of quality of the grains, considers the viability to guarantee a good germination associated to the development and growth of the cotyledon and radíele to achieve better mass of germinated
