SUMMARY The present work of investigation had as ob-jective to determine the factors where to fail health's rules in the foods expending from mer-chants who reside in the Central Market, Sector Night Dining, Sucre-Bolivia. To this study kept 36 expenders who took part activaly 21, answe-ring and being evaluated into specific methods of dates harvest which they showed like an im-portant factor the autorithies's negligence who see the nonfulfilment and good functioning into this place. This and a lot of factors influence no-tably in a deficient care to the consumer reper-cuting in the health of them.
